Here is my idea:
To get an idea of how much the public accepts acupunture. Before the interview with Aundra Mink, the receptionist of Whole Health Center in Colorado, she stated she had been recieveing acupunture for the last five months; making her the perfect candidate to interview. The first question was: How has acupunture helped you? Then Aundra responded with, “I use acupunture regularly for my general health needs. Additionally, it is vital to me as an athlete. Western Doctors couldn’t give..."
This way you do not have to use "I" in the essay, but you would keep it there for the quote.
